Kohlrabi Slaw

Kohlrabi slaw is a great summer dish and packs in a bit more sweetness and flavor than a traditional coleslaw. There are many variations you can use, so once you get the basics, get bold and try something different. We use apples in this slaw to help elevate the sweet flavors in the kohlrabi.

For the Slaw:

2 Small to Medium Kohlrabi Bulbs

2 Sweet Apples ( like a honeycrisp)


For Slaw Dressing:

1/4 Cup Mayonnaise

1 Tablespoon Apple Cider Vinegar

1 Tablespoon Honey (or sugar)

1 Teaspoon Salt


Start by Chopping your kohlrabi and apples into quarter inch matchsticks. Some people like the skin left on both, others like to peel. We prefer the skin on to add a bit of extra crunch.


Whisk dressing ingredients until well blended and smooth.


Pour dressing over the apples and kohlrabi. Stir well. Chill before serving.

  • Vegan: Kohlrabi, Jalapeno, Cilantro, Scallion with Lime, Orange, Oil, Honey, Rice Wine Vinegar
  • Kohlrabi, Greens, Radish, Spring Onion with Mayo, Horseradish, Lemon Juice, Pepper
