Braised Bok Choy, Leeks, Rice & Poached Egg.

          grain bowls are a great way to pack in lots of protein and
          nutrition, with layers of flavor. They're also easy to make
          and some can even be prepped ahead of time. 

          Add your own spin to this recipe with your favorite spices,
          you can go spicy, savory, or even sweet!

Ingredients (serves 4)

2 Medium Leeks

4 Bok Choy Bunches

2 Tbsp. Olive Oil

3 Tbsp. Chopped Garlic ( or 1 Tsp. Garlic Powder)

1/4 cup of Water

4 Cups Cooked Rice

4 Poached Eggs

This recipe will have Asian spices, adjust here if you want more savory or spicy!

3 Tbsp. Soy Sauce

2 Tsp. Rice Vinegar

2 Tsp. Honey

1 Tsp. Ginger



How-To

  • Chop Bok Choy into 3-4" pieces
  • Slice whites of leaks into thing rings.
  • Cook Rice according to package instructions.
  • Boil water in preparation for poached eggs.
  • Over medium heat in saute pan put olive oil in pan and cook garlic till fragrant. 
  • Add soy sauce, rice vinegar, ginger and water. Bring to a boil, then reduce back to medium.
  • Add leeks and cover pan, let cook for 3-5 minutes
  • Add bok choy, cover and cook for 4 minutes.
  • Add honey. Turn off heat.
  • Poach your egg.
  • Serve in a bowl with rice, veggie mixture, topped with pan sauce and then the poached egg. Garnish with parsley.
